Everyone loves a grain bowl, but sometimes, you just can't be bothered. In this week's recipe, we're introducing you to the grain bowl pan. You'll need all your grain bowl ingredients, a 9x13 pan, and about 20 minutes of active cooking.
Ingredients
1 cup dry quinoa
2 ½ cups vegetable stock
1 Tablespoon dried ramps
15 oz. can black beans
1 head of broccoli
2-3 ears of corn, grilled with the kernels removed from the cobb
½ yellow onion, diced
1 bell pepper, diced
salt and pepper to taste
olive oil
pickled red onions (optional)

Directions
In a saucepot combine your quinoa, dried ramps, and vegetable stock. Bring it to a boil
Once boiling, reduce to a simmer and cook for 20 minutes or until quinoa is completely cooked through
While your quinoa is cooking, put a saute pan on medium high heat
Add about 2 teaspoons of high temperature neutral oil and add your onions and bell peppers, cook for a few minutes until the onions and peppers have softened and have a little bit of color on them
Add in your corn and season with salt and pepper. Set to the side
Break your broccoli down into smaller pieces and microwave for 2 minutes
Remove from the microwave and toss in a bowl with olive oil, salt, and pepper
Lay broccoli on a sheet tray lined with parchment paper or aluminum foil and roast at 500 F for 5 minutes
remove your broccoli from the oven and turn the oven down to 275 or to the "warm setting" if you have one
in a frying pan that's on medium heat, pour in your black beans, do not drain the juice
Season your beans with salt, pepper, and whatever other spices you prefer
Cook until the bean liquid is all gone, and the beans are starting to breakdown
Remove beans from heat and set to the side
Add your quinoa, broccoli, beans, and corn mixture, in rows, to a 9x13 pan
Place in the oven to keep warm and then have everyone make their own grain bowl for dinner!
