It's Corn!...Salsa


Nothing compares to a bite of fresh sweet corn. It's delicious eaten off the cob with butter. It has the juice!


However, if you're looking to take your corn to the next level, try Liz's recipe for corn salsa.


This salsa blends the sweetness of corn with savory aromatics and fruit like , garlic, onion, avocado and tomato for a flavor explosion you won't believe. Use it as a dip for your favorite chips or a topper for your tacos. Any way you try it, you're sure to love it.


INGREDIENTS:

  • 2 ears sweet corn

  • 1 large avocado, chopped

  • 1 medium tomato, chopped

  • 1 medium red bell pepper, chopped

  • 1 medium green bell pepper, chopped

  • 1 red onion, diced

  • 3 cloves garlic, diced

  • 1/2 jalapeno pepper, diced

  • 2 limes

  • 1 tsp chili powder

  • salt and pepper, to taste

RECIPE:

  1. Cook 3 ears of corn with method of your choice (boil, grill, or sautée)

  2. Once corn is cooked. Set aside to cool

  3. When corn is cool, slice kernels off the ears (if not already done)

  4. Combine corn, avocado, tomato, bell peppers, onion, garlic, and jalapeño in a bowl

  5. Squeeze the juice of the 2 limes into the bowl

  6. Add chili powder

  7. Stir all ingredients until well combined.

  8. Add salt and pepper to taste
