Cannellini Bean Salad

The 2024 cookout season has officially started! What are you going to bring to the function? You're not grown enough to be tasked with making the potato salad or macaroni and cheese, but you've matured beyond bags of ice and cups.


This bean salad is easy to make, gets better the longer it sits, and will have the people asking you to bring "that salad you make" all summer long.

Ingredients


  • 1 can of cannellini beans, drained and rinsed

  • 8 oz. cherry tomatoes, halved

  • ¼ bunch parsley, chopped

  • ¼ large pickled red onion,

  • 1 lemon, juiced

  • ½ bell pepper, diced small

  • 1 avocado, diced (optional)

  • 3 Tablespoons olive oil

  • salt and pepper to taste

Directions

  1. In a large bowl mix lemon juice and olive oil

  2. Add your beans, vegetables, and parsley to the bowl

  3. Toss everything* together, season with salt and pepper, cover and refrigerate for 2 hours or overnight

  4. Bring to the cookout and become the bean hero you were meant to be!


*If using avocado, add it 10-15 minutes before serving to keep the avocado from oxidizing and turning brown.
