Cucumber & Sugar Snap Pea Salad

This is the time of year when we keep the oven off. You could eat ice cream for dinner, but unless you've just had your tonsils out or recently got dumped, ice cream is not a valid meal. Let's get something a bit more nutritious, yet just as delicious on your plate.

Ingredients

  • 1 cucumber, sliced

  • ½ pint sugar snap peas

  • 2 red bunching onions

  • 1 cup cherry tomatoes, cut in half

  • basil

  • salt and pepper

  • feta (optional)

  • dressing of your choice

Directions


  1. Wash and then cut your cucumbers in thick half-moons. Leave the skin on! Place in a medium bowl

  2. Clean your sugar snap peas and cut them on the diagonal. Add to the cucumbers

  3. Clean off your onions, and remove the roots. Cut your onions into thin slices and add to the bowl.

  4. Wash and cut your cherry tomatoes in half. Add to your bowl of veggies

  5. Cut your basil (mint works well here too) and add it to the veggies

  6. sprinkle with feta (optional) and toss everything together

  7. Cover and serve with the dressing of your choice!
