Sweet potatoes are the best supporting cast member of this simple roasted veggies recipe

Let's face it. Sometimes you just don't have the energy to prepare a multistep meal, but you still have to eat.

Before you give up and turn to the delivery apps. Give this simple dish a try. If you have potatoes in your pantry and some veggies in the fridge, there's no stopping you. If you love a little sweet with your savory, then be sure to add a yam to the mix.


Veggie Roast Ingredients

  • 1.5 to 2 pounds Yukon gold or red potatoes (cubed)

  • 1 medium to large sweet potato (cubed)

  • 1 medium red or yellow onion (chopped)

  • 1 small to medium green bell pepper (chopped)

  • 1 medium carrot (chopped)

  • 3 to 4 tbsp olive oil

  • 6 to 8 cloves garlic (minced)

  • 2 tsp thyme

  • 2 tsp rosemary

  • 2 tsp seasoned salt

  • Sea or Kosher salt, to taste

  • Pepper, to taste

Directions

  1. Preheat oven to 400ºF

  2. Combine all ingredients in a large mixing bowl

  3. Cover mixing bowl and shake vigorously until all of the veggies are well coated with olive oil and seasoning. If your mixing bowl does not have a lid, use a large spoon to mix ingredients until well combined and all veggies are coated with olive oil and seasoning.

  4. Cover a large baking tray with foil or silicone cooking sheet

  5. Spread seasoned veggies evenly on the tray

  6. Roast in oven for 20-30 minutes, then use a spatula to turn the veggies over.

  7. Continue to roast veggies for another 20-30 minutes, until the potatoes are golden browned and the edges are crisp.

  8. Serve as a side or the main event
