Veggie Roast Ingredients
1.5 to 2 pounds Yukon gold or red potatoes (cubed)
1 medium to large sweet potato (cubed)
1 medium red or yellow onion (chopped)
1 small to medium green bell pepper (chopped)
1 medium carrot (chopped)
3 to 4 tbsp olive oil
6 to 8 cloves garlic (minced)
2 tsp thyme
2 tsp rosemary
2 tsp seasoned salt
Sea or Kosher salt, to taste
Pepper, to taste

Directions
Preheat oven to 400ºF
Combine all ingredients in a large mixing bowl
Cover mixing bowl and shake vigorously until all of the veggies are well coated with olive oil and seasoning. If your mixing bowl does not have a lid, use a large spoon to mix ingredients until well combined and all veggies are coated with olive oil and seasoning.
Cover a large baking tray with foil or silicone cooking sheet
Spread seasoned veggies evenly on the tray
Roast in oven for 20-30 minutes, then use a spatula to turn the veggies over.
Continue to roast veggies for another 20-30 minutes, until the potatoes are golden browned and the edges are crisp.
Serve as a side or the main event
